Glatt Kosher Certification
Glatt kosher is the gold standard of kosher meat certification, originating from the Ashkenazi tradition. The word "Glatt" means "smooth" in Yiddish, referring to the condition of the animal's lungs after slaughter. For meat to qualify as Glatt kosher, the lungs must be completely smooth and free of any adhesions, lesions, or irregularities.
This rigorous standard goes beyond the baseline requirements of kosher law (halacha). While standard kosher certification permits certain minor adhesions that can be removed, Glatt certification demands an entirely blemish-free lung. This additional scrutiny ensures that only the healthiest animals are selected, resulting in superior meat quality.

Chalak Kosher Certification
Chalak (also spelled Halak) is the Sephardic equivalent of the Glatt standard, derived from the Hebrew word meaning "smooth." While the underlying principle is the same — ensuring the animal's lungs are free of defects — Chalak certification follows the rulings of the Beit Yosef (Rabbi Yosef Karo), the primary halachic authority for Sephardic communities.
The Chalak standard is embraced by Sephardic, Mizrachi, and many Israeli communities worldwide. It represents an uncompromising approach to kashrut, adhering strictly to the Shulchan Aruch's requirement that only animals with perfectly smooth lungs may be consumed.

Mashgiach Supervision Process
A mashgiach (kosher supervisor) is present at every critical stage of our production process — from the selection of live animals through slaughter, inspection, processing, packaging, and shipping. Our team of certified mashgichim are trained professionals with deep knowledge of halacha and modern food production.
The supervision process includes verification of the shechita (ritual slaughter) performed by expert shochtim, meticulous post-slaughter lung inspection, nikur (removal of forbidden fats and sinews), proper salting and soaking procedures, and continuous oversight of processing and packaging to prevent any cross-contamination.
Our mashgichim maintain detailed records and provide full traceability from farm to delivery. Every batch is documented with certification seals that can be verified with the issuing rabbinical authority.
