Glatt kosher refers to meat from animals whose lungs are smooth and free of adhesions, meeting the highest Ashkenazi standards. Chalak is the Sephardic equivalent, meaning "smooth" in Hebrew. Both certifications ensure the highest level of kosher compliance.
